It's starting to feel a lot like Christmas and the social calendar is filling up! It is kind of crazy how we have this mad rush to catch up with every friend before Christmas! Anyway one of my all time favourite Christmas indulgents is a good Rum Ball. Not completely sure why (maybe my Grandma fed them to me on the sly when I was little?)
So you have friends coming over for dinner but need a dessert that is quick and easy. These rum balls are so easy and they are actually good for you. The traditional rum ball recipe you find is not exactly full of nourishing whole foods, it's quite the opposite in fact. But after making Dr Libby's Brain Balls, with a couple of modifications...here is a Nourishing Rum Ball for you to try this Christmas or anytime really.
1 cup of raw cashew nuts
1 cup of raw walnuts, halves and pieces
1 cup sunflower seeds
8 Medjool dates, pitted and coarsely chopped
1 cup desiccated coconut (sulphur free)
1/3 -2/3 cup cocoa or cacao powder (depending how dark chocolate tasting you like)
pinch of salt
3 tablespoons of water
2 tsp of rum essence (optional)
Combine the cashews, walnuts, sunflower seeds, dates and coconut in a food processor and blend until the nuts, seeds and dates are finely chopped. Then add cacao, salt, water and rum essence. Process further until the mixture forms like dough. Add a little extra water if needed to ensure it is well combined.
Roll into balls between the palms of your hands. Roll in desiccated coconut for the traditional rum ball look.
Place in the fridge to chill for at least 30 mins.
